Ingredients
- 1¼ cups all-purpose flour
- ¾ cup fine cornmeal
- 1 Tbsp baking powder
- 2 TBS honey
- 1 tsp salt
- 2 TBS olive oil
- 1 egg
- ½ –⅔ cup warm milk
Method
- Mix dry: Whisk together flour, baking powder, cornmeal and salt.
- Add wet: Stir in the honey, olive oil, egg, and warm milk until you have a wet, soft dough.
- Shape: Divide into 4 squares about ½ inch thick on a parchment-lined sheet.
- Mark: Score a simple diagonal criss-cross with a knife or bench scraper for the classic lembas look.
- Bake:
- Finish: Cool completely. Wrap in parchment or, if you want to be true to the story, tuck into leaves for an Elvish touch!
For crisp travel-ready waybread: 300°F for 1 hour.
For softer snacking bread (my pick): 350°F for 30 minutes,

Serving and Storing
- Delicious warm with honey butter or jam.
- Wrapped tightly in parchment or leaves and tucked into an airtight tin, it keeps well for two to three days. Long enough for a small quest!
