Ingredients
- 1 cup water
- ½ cup brown sugar
- ¼ cup maple syrup
- ¼ cup pumpkin purée
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp vanilla extract
- Tiny pinch of salt
Method
- Combine the water, brown sugar, maple syrup, pumpkin purée, cinnamon, pumpkin pie spice, vanilla and a tiny pinch of salt in a medium saucepan.
- Whisk until combined and bring to a gentle simmer over medium-low heat. Cook for 3–5 minutes, stirring occasionally, until the sugar has dissolved and the flavours have melded together.
- Remove from the heat and let cool completely. For a smoother syrup, strain through a fine mesh sieve.
- Transfer to a clean jar or bottle and refrigerate.
- Shake well before each use. Stir 1–2 tablespoons into coffee, tea or milk, adjusting to your preferred sweetness and pumpkin spice flavour.
How to Make a Pumpkin Spice Latte
- For a hot pumpkin spice latte: Brew 1 cup of hot coffee or 1–2 shots of espresso. Stir in 1–2 tablespoons of pumpkin spice syrup, then add about ½ cup warm, frothed milk. Use dairy or your favourite plant-based milk! Finish with cinnamon or whipped cream if you fancy.
- For an iced pumpkin spice latte: Fill a glass with ice. Add 1 cup of coffee or 1–2 shots of espresso, stir in 1–2 tablespoons of syrup, then add about ½ cup cold milk. Give it a good stir and enjoy!
- For a pumpkin chai latte: Brew ¾ cup strong chai tea and stir in 1–2 tablespoons of pumpkin spice syrup. Top with about ½ cup warm, frothed milk. The chai spices and pumpkin syrup are a match made in heaven!
